Bouillabaisse

A traditional French fish stew originating from the coastal city of Marseille.

Bouillabaisse is usually made from several different kinds of fish (up to a dozen in some cases) cooked with tomatoes, onions, various herbs and wine.

A complex Provençal dish to cook, it is de rigueur for serious chefs to master Bouillabaisse.
