Philip's Bar opened at Dormy House
 
            
Philip’s Bar has been formally opened by the Dormy’s general manager David Field, with the unveiling of a portrait of a man whose marvellous spirit and impeccable standards live on.

Pictured with Cohiba cigar and glass in hand, giving a nonchalant wave goodbye, the image which hangs on the mellow stone walls captures him to a tee.

Mr Field said: “In my job as a hotel manager I have met thousands of people and out of all of them I have to say that Mr Sørensen was one of the most genuine and inspirational I’ve had the pleasure to meet.

“I shall remember him as the perfect gentlemen, and I can picture him now enjoying a steak cooked rare and flare with a glass of Sancerre”.

JPS - as he was known to friends and colleagues - sadly passed away earlier this year. The Dormy remains very much a family run hotel with the ownership a going concern of the Sørensen family and the tradition of hospitality and insistence on quality that originated with JPS living on.

Ingrid Philip-Sørensen remains a director at the hotel and it is her keen eye for interior design that has overseen the transformation of the new bar area with Chinese lacquer red leather seats, painted beams and a collection of duck memorabilia.

JPS loved to visit the hotel and have a J&B on the rocks in his favourite chair in this space. This rare malt is available from Philip’s Bar, alongside cocktails and a variety of traditional beers, spirits, fine wines and soft drinks.

Although he had no experience running a hotel, it was a move JPS never regretted making. On the contrary he always said he was delighted that so many people had enjoyed happy times there. In his last ever interview he said: “It’s a hotel for everyone, where everyone is equally welcome. We do our best to fulfil the wishes of every single customer, as long as it is legal”.

Honouring the legalities of the law and demonstrating JPS’s ability to solve problems was demonstrated with the recent creation of an outdoor smoking room.

Similarly, JPS’s ability to wear all the uniforms was also apparent when in the early days of the hotel when the kitchen didn’t even have a roof; a big dinner for 140 guests was stretching the new staff to their limits.

JPS, despite at the time being chairman of Group 4 donned a waiter’s jacket and started helping out. Service was too slow for one irate guest who barked at the impromptu stand-in “Waiter, Fetch the manager!” Typically JPS revealed himself as the recipient of the command and defused the situation with his hallmark calmness and charm.

The late Jørgen Philip-Sørensen, the entrepreneur owner of the Dormy House since 1977, is to be remembered at the hotel with the refurbishment and renaming of the hotel bar in his honour.
